Ligurian tradition and signature hospitality in the heart of Genoa
In the vibrant heart of Genoa’s Porto Antico, just steps from the Aquarium and surrounded by the moored boats, lies a place that has become a landmark for those seeking the authenticity of Ligurian cuisine paired with a refined dining experience: Ristorante I Tre Merli al Porto Antico.
This gastronomic adventure has deep roots dating back to the 1980s, when three young Genovese, despite having pursued different educational paths, decided to embark on a journey in the world of hospitality. Today, the Porto Antico location is led by two architects who have masterfully combined their passion for food with an eye for design. Housed in a historic coffee warehouse, the restaurant retains its original charm through architectural elements like stone walls, marble and slate columns, and custom-made wooden shelves that display thousands of wine bottles. The setting is further enriched by two open wood-fired ovens and medieval banners that pay tribute to the city’s historic districts.
The cuisine is a true homage to Ligurian tradition, reinterpreted with both taste and respect. Top-quality ingredients and authentic recipes are at the core of the menu, which proudly bears the “Genova-Liguria Gourmet” certification. The aromas wafting from the wood ovens recall the old sciamadde-traditional Genoese eateries- serving specialties such as chickpea farinata, Recco cheese
focaccia, savory pies, stuffed vegetables and fried fish.
There’s also room for more elaborate heritage dishes, sourced from centuries-old recipes preserved at the National Museum of Palazzo Spinola, including cappon magro (a layered seafood and vegetable dish), trofie al pesto, pansoti with walnut sauce, and ravioli al tocco (a meat ragù). Fresh fish is delivered daily from Camogli, while the dessert selection ranges from local classics like panera (coffee semifreddo) and canestrelli cookies to original creations such as rose semifreddo and basil cream.
The climate-controlled wine cellar offers a carefully curated selection of labels from Liguria, Tuscany, and Piedmont, alongside a thoughtful assortment of international wines, sparkling wines and dessert wines.
Thanks to its privileged seaside location, the restaurant offers a truly unique atmosphere, especially in the warmer months, when guests can enjoy lunch or dinner outdoors, immersed in the charm of the port and the cultural vibrancy of the surrounding area. Hospitality lies at the heart of I Tre Merli’s philosophy, as expressed by their motto: “Hospitality in Liguria.” The atmosphere, elegant yet welcoming, invites visitors to return and discover new layers of the experience each time.
To complete the journey, the owners have also opened Locanda I Tre Merli, a boutique hotel overlooking the picturesque harbor of Camogli. Here, guests can unwind to the sound of the waves, enjoy a private spa, stay in stylishly designed rooms with sea views, and start their day with personalized breakfasts or local wine tastings on the waterfront terrace.
I Tre Merli bring to life an unforgettable journey through the flavors, hospitality and the beauty of Liguria.
