A timeless culinary journey in the heart of Ostuni
In the enchanting whitewashed lanes of Ostuni, just a few steps from the magnificent Cathedral, there is a restaurant where history, tradition and authentic flavours come together in a truly unforgettable experience: Osteria del Tempo Perso. Dining here means discovering the essence of Puglian gastronomy while sitting inside spaces that seem to have preserved the atmosphere of another era.
Osteria del Tempo Perso features two unique dining rooms carved into the ancient limestone of Ostuni’s historic centre. One is a beautifully preserved 16th- century cave, once an old bakery, while the other was the granary that supplied it. Their exposed stone walls and elegant, understated décor create a charming atmosphere where history and refined simplicity blend perfectly.
For travellers visiting Ostuni, a stop at Osteria del Tempo Perso is almost a ritual: a chance to experience not only the flavours of Puglia but also the spirit of its ancient civilisation.
Authentic Puglian Cuisine Rooted in Tradition
The philosophy of Osteria del Tempo Perso is based on respect for the culinary heritage of Ostuni and Puglia. The menu celebrates genuine local ingredients, traditional recipes and the simplicity that has always defined Mediterranean cuisine.
Among the restaurant’s celebrated starters are seasonal vegetable flans, classic parmigiana di melanzane, mint- flavoured bread meatballs, local dairy specialities, Tuscan cured meats and those from nearby Martina Franca, octopus with onions, stuffed cuttlefish, and a delicious buckwheat salad with basil, extra virgin olive oil, oregano, cherry tomatoes, ricotta marzotica cheese and burrata served with pomegranate.
The first courses faithfully follow the traditions of Puglian homemade pasta. Guests can enjoy specialities such as the baked tegami of cardoncelli mushrooms covered with golden bread crust, prepared with mushrooms sautéed in olive oil, garlic, parsley and tomatoes before being baked until the crust becomes perfectly crisp.
Other highlights include orecchiette with clams and zucchini flowers, the iconic orecchiette with turnip greens and toasted breadcrumbs, laganari pasta with cardoncelli mushrooms and chicory, and the traditional fava bean purée served with wild chicory, lampascioni and sautéed peppers.
The second courses offer dishes such as sea bass baked in foil with clams, baby cuttlefish, tomatoes, parsley, garlic and olive oil; brasciola of donkey meat served with meat or bread meatballs scented with mint; and beef fillet paired with Podolica beef specialities and turnip greens. To complete the experience, guests can enjoy traditional desserts such as the delicious sporcamuso, a delicate pastry filled with cream.
The restaurant also prepares its own bread using durum wheat flour and wholemeal semolina, including versions enriched with olives — a true symbol of Puglian hospitality. Vegetarian and gluten-free options are also available, ensuring that every guest can enjoy the flavours of this extraordinary land.
