Bruno Cingolani, the “Chef of Nature” who made exceptional ingredients his philosophy

Bruno Cingolani is an Italian chef from Montemarciano, in the province of Ancona, in the Marche region. Born in 1960, he has devoted more than fifty-four years to the culinary arts, embracing cooking as a journey of knowledge, research, and deep respect for nature. His career began at a very young age in the hospitality industry, shaped by dedication, discipline, and hands-on training in some of Italy’s finest hotels and restaurants.

After completing his training in the Marche region, Cingolani moved to Piedmont in 1977, where he began his professional career at the Hasta Ristorante Hotel in Asti. Within a few years, he rose through the ranks to become Executive Chef and Hotel Director. Throughout his career, he worked in several prestigious Italian hospitality establishments, including renowned venues in Forte dei Marmi, Turin, and Franciacorta, refining a culinary philosophy that combines technical excellence, genuine hospitality, and an in-depth understanding of exceptional ingredients.

For many years, as Executive Chef of the Hasta Ristorante Hotel in Asti, Cingolani welcomed distinguished national and international guests, including institutional representatives as well as personalities from the worlds of sport and culture. In 2003, his career led him to Alba, in the heart of the Langhe region, where he became chef and owner of Dulcis Vitis. For more than two decades, the restaurant established itself as a benchmark for refined cuisine built on the uncompromising quality of its ingredients. His culinary philosophy is founded on a simple principle: outstanding ingredients require minimal intervention.

For this reason, Bruno Cingolani likes to describe himself as the “Chef of Nature,” because his cuisine begins with listening to the ingredients themselves and enhancing their identity without altering their essence. His cooking eliminates the unnecessary, seeking balance, authenticity, and harmony between flavour and territory. A recognition of this philosophy came with Cingolani’s invitation to join the Accademia della Sfoglia, an initiative dedicated to preserving and promoting the art of handmade pasta. The academy is founded on a principle that Cingolani fully embraces: every Italian chef should know how to make fresh pasta by hand; a direct, tactile connection with the raw ingredients themselves.

His distinctive style is the result of the meeting between two complementary culinary traditions. From Marche come the heritage of handmade pasta, seafood, rural cooking, woodland ingredients, and game. From Piedmont come French-inspired technical precision, exceptional beef, Alpine dairy products, prestigious wines, and the celebrated White Truffle of Alba. The fusion of these two worlds has shaped a personal style that successfully combines tradition with innovation.

Over the years, his relentless search for excellence has led him to discover outstanding producers and exceptional ingredients in numerous countries around the world, earning him widespread recognition within the international gastronomic community. A defining aspect of his work is his close relationship with farmers, breeders, and artisan producers. “My Michelin star is the farmer who provides my ingredients,” is the chef’s well-known motto, reflecting his belief that every great dish begins with the quality of the land and the dedication of the people who cultivate and protect it.
