The Legacy of Savini Tartufi Four Generations, One Passion

Savini Tartufi is a company built on family. Its story goes back four generations of truffle hunters, passing down a unique passion from father to son—a tradition that has evolved into a profession. It’s a patient craft, guided by the rhythm of nature, that has remained unchanged for centuries. The truffle hunter walks the woods with only one faithful guide: the dog.

The story begins in 1920, when Giuseppe Savini, while raising his family of sharecroppers at Villa Saletta in Palaia, brought home a curious, aromatic tuber—starting a legacy committed to harmony with nature. His son Zelindo, appointed huntsman by the estate’s owner, began discreetly trading truffles with noble guests during the grand banquets held at the Villa—laying the foundation for what would become the family’s lifelong work.

From there, the story continued with Luciano Savini, who pioneered the idea of preserving truffles in jars, making the product accessible beyond the harvest season. Today, Cristiano and Romina Savini lead the company, expanding the brand globally while staying true to its roots. Integral to this legacy is the Lagotto Romagnolo, the trusted truffle dog. Each Savini hunter is always paired with a Lagotto, continuing a tradition that honors the deep bond between man and dog in the forest.

Unlike other regions in Italy, Savini Tartufi’s unique area between Pisa, Florence, and Siena offers truffles all year- round, with a different variety for each season—including the prized Tuber Magnatum Pico (white truffle), black summer truffle, and bianchetto.

Savini Tartufi is not only about fresh truffles. The company also crafts gourmet preparations deeply rooted in family tradition—like truffle honey, inspired by Grandpa Zelindo’s habit of carrying stale bread and honey every time he ventured into the woods.

Salsa del Tartufaio is another cherished tradition. This sauce—made with mushrooms and anchovies—was served during Sunday meals, when the family gathered to enjoy what had been foraged and prepared throughout the week.

Peschiole is a family favorite with its own story. One of Luciano’s best friends from Southern Italy once sent him a jar of brined baby peaches as a gift. In the countryside, when young peaches first appear on the branches, some are removed so the rest can grow larger. Instead of going to waste, these baby fruits are brined. Luciano tasted them and elevated the recipe with truffle. Crunchy, fresh, and flavorful, Peschiole are perfect with aperitifs, in salads, or even burgers.

To share this heritage, the family offers the “Truffle Experience.” Guests join expert hunters and their loyal dogs on a truffle hunt, followed by a gourmet tasting or cooking class.
